    Get rid of those "everything but the kitchen sink" rub recipes that have a dozen spices muddling the awesome flavor of properly smoked beef brisket. A basic Texas style salt and pepper rub is all you need.

    Thanks lardog doing a brisket for 1st time and agree with you on the rub. Simple salt &pepper, watched a lot of Aaron Franklin videos but am doing it on my new KJ Classic. We'll see how it goes, we might be eating late as I didn't start cooking til early morning as I saw a few KJ recipes saying they were done in 8 hrs.

      LOVE IT! My only suggestion is to use kosher or sea salt same result as far as a bark, but less chance of over salting the meat.
